Easy Does It: Best Thirst Quencher EVER

Following on from previous post on Summertime – which talked about what to eat when the weather gets blistering hot – like it has over the last couple of days, I thought it would be great to share with you a simple recipe of what we in India consider to be one of the best thirst quenchers (which also happens to be a great digestive).

Chaas or Buttermilk

  • 2 cups fresh curds, whisked
  • 1 tsp cumin seeds powder
  • 1/2 tsp ginger-green chilli paste
  • 1/2 tsp black salt
  • Salt to taste
  • 1 tsp oil
  • 1/4 tsp cumin seeds
  • A pinch of asafoetida

 For the Garnish

  • 2 tbsp finely chopped coriander

Instructions 

Step 1: Combine the curds, cumin seeds powder, ginger-green chilli paste, black salt and salt in a deep bowl and mix well. If you like, you can also put these in a blender and mix it up.

Step 2: Add 4 cups of chilled water and whisk well. You can also add ice cubes to the mix and blend it in the blender. Keep aside.

Step 3: For the tempering, heat the oil in a small pan and add the cumin seeds.

Step 4: When the seeds crackle, add the asafoetida and pour the tempering over the buttermilk.

Step 5: Serve chilled garnished with coriander.

Tip: You can also chill the buttermilk in the refrigerator and serve later, but use it in the same day.

Masala-ChaasSome suggestions:

  • Instead of adding ice cubes in the blender, you can add ice cubes in the end. But I suggest you blend the ice cubes in the blender or use chilled yogurt and cold water.
  • You can also add more water if required to thin the chaas.

Remember this is more of a day drink.

I can guarantee you won’t stop at 1 glass. Chill Out!
